This weekend was all about celebrating!  A bridal shower for my sister Adrienne and more birthday fun with friends & family.  You may have already read some or seen pictures from the weekend if you follow my sister Liz, but here is a little more… from “Around the House” to Tailgating at 30!…

So turning 30 has been quite fun thus far, but now it’s time to gear up for the big wedding on December 17th – oh and Thanksgiving (which we’re hosting this year) and Christmas… whew I’m tired!

Mini Pumpkin Muffins

(If you have a mixer that you love – this is the perfect time to use it!  I love my KitchenAid mixer, so it always gets used when making this crowd favorite!  - thanks for sharing this recipe, Erin!)

  • 1 cup oil
  • 2 & 2/3 cups sugar
  • 4 eggs
  • 1 can pumpkin
  • 2/3 cup water
  • 3 cups flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup chopped nuts – walnuts work just fine

Beat oil and sugar; add eggs one at a time.  Mix in pumpkin and water.  Mix together dry ingredients in a separate bowl if desired and add to wet mixture until moist.  Stir in nuts Bake at 350 for 15-16 minutes for mini muffins or 1 hour for loaves. (Makes approximately 85-95 mini muffins with one batch.)
